Chutney Recipe
Boil a chicken carcass with some thyme, bay, black pepper, salt and onion to make a stock. Let it cool down sufficiently so that you can then remove the carcass from the liquid. Remove any meat from the carcass and place it back into the pan. Add some carrots, garlic, chopped up potato, green cabbage and some noodles. Bring back to boiling and then let the soup simmer until the potatoes are cooked. When ready stir in a large spoon of date and lime chutney. Serve. Great comfort food! At home or outside in the cold when walking.
